Chris, i researched alot before purchasing my knives and was tempted to get the Victorinox but chose calphalon in preference to.I do take my calphalon knives but i may purchase the chef choce sharpener. My dubiousness is,,,,How often do you use that sharpener? Do you use the avenue that comes with the knives inbetween? And can you over use the chef sharpener TOO often and therefore breakdown the knife? Thanks for your instal, your mags and your shows,,,getting friendly to make eyes at look for your bloopers .
